Almonds: Almonds are a great source of vitamin E, magnesium, potassium, zinc, iron, fibre and monounsaturated fat. They also contain more calcium than any other nut which makes them very good for people who do not, or cannot have dairy.
Almond Macaroons
Ingredients
Makes 14
1 lg egg white
90gm ground almonds
90gm unrefined caster sugar
½ tsp vanilla extract
14 peeled almonds
Method
Preheat the oven to 180/190 C-gas 4. Line a baking tray with grease-proof baking paper.
Beat the egg white until frothy then fold in all the other ingredients until you get a sticky dough. If it’s too dry add a few drops of water or a little corn flour if too wet.
Dust your hands with some icing sugar and form little balls with the dough. Place the balls onto the baking tray, place an almond on top of each ball and bake in the middle of the preheated oven for 15/18 minutes or until golden. Immediately place on a wire rack to cool.
